Here are the recipes that Fareway Dietitian, Caitlyn Ferin, showed off on Tuesday’s Midday show.

Garlic and Lime Loin Slices


·         1 pound tenderized pork loin slices
·         4 clove garlic, chopped
·         1 tsp cumin
·         1 tsp chili powder
·         1 tsp paprika
·         1 lime, juice and zest
·         1 pinch salt
·         1 pinch pepper

Season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice over pork and add zest. Marinate for at least 20 minutes in the refrigerator. Preheat grill to medium heat and grill pork for 2-3 minutes per side, or until internal temperature reaches 145°F.

Grilled Corn


·         4 ears corn, husks peeled back and silk discarded
·         1 Tbsp canola oil
·         1/4 cup feta or asiago cheese
·         1 tsp paprika
·         1 pinch salt
·         1 pinch black pepper
·         4 lime wedges


Preheat grill to medium heat. Grill corn until charred, about 12 minutes. Brush with oil and sprinkle with cheese, paprika and salt. Serve with lime wedges.

Grilled Potato Salad


·         12 small red potatoes, diced
·         5 Tbsp fat free Mayo
·         2 Tbsp Dijon mustard
·         1 Tbsp canola oil
·         2 Tbsp paprika
·         1 tsp garlic powder
·         1 tsp thyme
·         1 tsp rosemary
·         1/2 tsp celery seed
·         2 oz precooked, crumbled bacon


Preheat grill to medium heat. Add potatoes, oil, and dry ingredients into a foil pan. Mix ingredients together and cover with aluminum foil to cook for approximately 20 to 25 minutes or until potatoes are soft, stirring occasionally. Remove from heat and add mayo and mustard. Serve warm.
