Did you know avocados can be grilled!?
Cut the avocado in half and remove the pit. Use a slightly firm avocado so it does not get too mushy on the grill grates
Squeeze lemon or lime juice on the flesh
Place flesh side down on the grill for 2-3 minutes
Sprinkle with salt and pepper
You can scoop or slice the avocado or keep the avocado intact and fill the center with some delicious ingredients for an eye-catching, delicious side dish.
Here are several filling options:
Grill the avocado as before. Then fill with several tablespoons of diced tomatoes and one minced garlic clove. Sprinkle with mozzarella cheese and return to the grill, shell side down, until the cheese is slightly melted. Serve as is or scoop out and spread on to garlic bread.
Start with the basic grilled avocado and add 1 tablespoon of your favorite salsa, canned corn, and black beans. Top with shredded cheese and return to the grill until the cheese melts. Garnish with a dollop of sour cream (or Greek yogurt) and a sprig of cilantro. Serve as a delicious side dish or with a bowl of whole grain tortilla chips and scoop the goodness directly out of the shell.
